Vinh Xuong Bakery is a third-generation, family-owned and operated banh mi shop. One ofDenver’s longest standing Vietnamese shops, Vinh Xuong Bakery offers banh mi sandwiches in traditional Vietnamese style, served on freshly baked French baguettes with pickled vegetables, fresh herbs, and house made sauces plus sweet baked good prepared in a French style.

Aloha Poké Co. offers healthy, fresh, made-to-order raw fish bowls in traditional Pacific island style. An adventurous fast-casual option for sit-down or to-go lunch or dinner, the eatery exudes modern, vibrant Pacific style and a laid-back demeanor that encourages social dining. The menu combines sushi-grade tuna and salmon, as well as tofu, into customizable bowls with rice or mixed greens base and toppings ranging from cucumber and pineapple to Maui onion and seaweed, as well as a collection of punchy, flavorful sauces.
Fior Gelato started as a wholesale company, supplying restaurants in the Boulder area. The founders love direct interaction with the customers. In fact, after being accepted into The Boulder Farmers Market where they tested new flavors and saw firsthand reactions to the gelato, they decided to open up their own gelato shop on Boulder’s Pearl Street Mall. The fanbase grew quickly and the success of the first store led to the opening of a second in Boulder.
